Method
Start by sautéing the mushrooms in butter over medium heat until cooked through. Season with salt and pepper at the end.
Next, prepare your eggs. Whisk them together with a splash of milk and a pinch of salt.
Heat a skillet with a knob of butter and toast the bread—one side until golden brown, the other just lightly warmed.
Transfer the bread to a plate. In the same skillet, quickly make the scramble. Pour in the egg mixture, let it set for about 5 seconds, then gently stir with a spatula using a figure-eight motion. This creates that tender texture—soft, delicate curds rather than an omelet. Cook for roughly 20 seconds, then remove from heat even if it looks slightly underdone. The residual heat will finish cooking it perfectly while keeping it silky.
Spread cream cheese on the toasted bread, top with the scramble, and crown it with the sautéed mushrooms. Drizzle lightly with sesame oil and finish with a crack of fresh black pepper.
