Method
Chop all the vegetables as you like. Slice the cucumbers into rounds and place them in a large pot or basin.
Finely shred the cabbage. Slice the tomatoes into half-rings.
I cut the carrots in half, then half again, and slice them finely. You can also grate them using a julienne peeler if you prefer.
Slice the bell peppers into thin half-rings. Cut the onion into half-rings. Finely chop the fresh herbs.
I also add one hot chili pepper sliced into rings to this salad. You can skip this if you prefer.
Combine all the vegetables and add 2 tablespoons of salt, 100 grams of sugar, 150 ml of vegetable oil, and 80 ml of 9% vinegar.
Mix everything thoroughly and let it sit for 3 hours. Stir the salad every 30 minutes. During this time, it will release quite a bit of liquid.
Then distribute the salad into sterilized jars and fill them to the top with the brine. Cover with sterilized lids.
Place a kitchen towel on the bottom of a large pot, then set the jars with their lids on top. Pour water up to the neck of the jars.
Sterilize liter-sized jars for 30 minutes and half-liter jars for 20 minutes.
Then seal the jars, turn them upside down, and wrap them in a blanket until they cool completely.
